Welcome to the best time of year to eat fresh! I am a New Jersey girl and I adore our fresh produce this time of year. I was asked by a few friends to share some of my easy, healthy and yummy recipes.
One of my favorite things to make in summer is all types of “salsa’s”. They are very versatile and can be used from an appetizer, topping to grilled meats and veggies or use as a side dish. I have many combo’s that I incorporate into my summer diet during the fresh produce season. These recipes I have adapted to make the salsa’s easy to take to church picnics, taking to party’s or using the left overs from the night before in breakfast omelettes. Most times these salsa’s taste better the second day after all the flavors have married.
One of my favorites is a New Jersey Peach Salsa. I use it as a appetizer with chips, or on grilled fish and it is fabulous with Brie cheese as a grilled cheese sandwich on sour dough bread.
Peach Salsa
4 ripe peaches chopped fine
1 red pepper chopped fine
½ red onion chopped fine
4-6 cloves of garlic chopped fine
½ jalapeno pepper chopped fine
1/2 handful chopped fresh cilantro
Juice of 1 lime
Chop up all the fruit and veggies place in a large bowl, squeeze the juice of one lime and mix well. Chill for 1 hour and serve.
Enjoy the taste of the season!! Adapt this recipe to your taste and change as you would like. I use other fruits too- pineapple, mango, apple, all make an awesome salsa. Happy Summer
